– 4 cups whole milk
– 1 cup heavy cream

1. Preheat the milk, cream and salt in a huge pot to the temperature as high as 190°F (88°C). Stir occasionally.

– 2 cups heavy cream

1. Warm the cream in a double boiler to 190 Fahrenheit and 88 Celsius. Stir occasionally.
2. After that added the lemon juice and stir gently for 5 minutes with low flame.
3. Chill for 12 hours and then strain it through a cheesecloth and let it cool in the refrigerator.

-1 gallon whole milk that is not ultra pasteurized.
– 1 1/2 teaspoons citric acid
-1/4 tablet rennet within 1/4 cup water
– 1 teaspoon salt

Instructions:

1. Heat milk and citric acid to 90 F (32 C). This will need to be stirred after a while before adding the rennet then allowing the mixture to sit until curd forms.
2. Squeeze the curds and heat to 40\u00b0C and finally drain the whey.
3. Roll into smooth flat slabs and expand the curds in hot water. Many can be shaped into balls and then chilled in brine.

– 1 liter whole milk

-¼ cup of white vinegar or lemon juice
– 1 teaspoon salt

Instructions:

1. Warm milk to 185 degrees F (85 degrees C). As soon as the milk is on the boil, stir in vinegar until they create the curd formation.
2. Allow it to stand for about 10 minutes then filter using a cheesecloth.
3. Add salt to curds and put into a mould for the purpose of getting an ideal texture of curd when it is being sold.
