1 cup chicken broth

Instructions

Prepare the Marinade:

In a large bowl, combine all the marinade ingredients.

Add the chicken pieces, making sure they are well coated. Cover and refrigerate for at least 2 hours or overnight for best results.

Cook the Chicken:

In a large skillet or Dutch oven, heat 2 tablespoons of olive oil over medium.
Remove chicken from the marinade; brown it on both sides, about 4-5 minutes per side. Remove from the skillet; set aside.
Prepare the Sauce:

Add sliced onion and carrots to the same skillet; sauté until softened, about 5 minutes.
Stir in the olives, dried apricots, diced tomatoes, chicken broth, and honey (if using).

Return the browned chicken to the skillet, making sure it’s covered by the sauce.

Simmer:

Reduce heat to low. Cover the stew and cook until chicken is cooked through and tender, 30 to 40 minutes.

Serve:
