Ingredients:
-4 skinless chicken breast deboned
– Salt and pepper, to taste
– 1 cup all-purpose flour
– 2 large eggs, beaten
– 1 cup breadcrumbs
Parmesan cheese for the sauce
-1 cup of grated cheese
– 2 tablespoons of finely chopped parsley
– 2 tablespoons melted butter
– 1/4 cup olive oil
Instructions:
1. Preheat your oven to 375 degrees Fahrenheit or 190 degrees Celsius. Place the greased baking tray on the above said paper and aluminum foil.
2. On both the sides, sprinkle pepper and salt on the chicken breast.
3. Place the flour in a little flat plate. Coat each of the chicken breasts, lightly, in flour and scraping the face of flesh to remove excess coating.
4. In another small bowl place the eggs and beat them. As applied while coating the flour and the chicken breast, place the flour coated chicken breasts into the beaten eggs such that they are well coated.
5. Finally, with the third small dish, mix the breadcrumbs and parsley in the parmesan. Cover the chicken breasts in the breadcrumb mixture and press the breadcrumbs onto the chicken.
6. Preheat olive oil and the melted butter in a large skillet big enough to also serve the dish in the oven. From hot, placing the breaded chicken breasts to the skillet and fry for 2-3 min in each side or until it turns to brown and still soft.
7. When you put the skillet in the reheat oven, you put in the chicken and cook it for another 20-25 mins or until fully cooked, 165F or 74C. After that you should use a meat thermometer just to see that the temperature is right and the whole chicken has been cooked.
8. Take the chicken out of the grill and place it on a warmer and allow it to stand for 5 minutes before it is eaten.
9. Some boiled vegetables can be served side by side if you want the Parmesan Chicken hot and garnished with the chopped parsley.
