Instructions
1.Prepare the Chicken:
– Place the chicken breasts between two sheets of plastic wrap or parchment paper.
– Pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
2. Set Up Breading Station:
Place the flour in a shallow dish.
In another shallow dish, whisk the eggs with milk.
Combine breadcrumbs, paprika, garlic powder, salt, and black pepper in a third dish.
3. Bread the Chicken:
Coat each chicken breast in flour, shaking off the excess.
Dip it into the egg mixture, ensuring it is fully coated.
Press the chicken into the breadcrumb mixture, covering it completely and pressing lightly to adhere.
4. Fry the Chicken:
– Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
– Once the oil is hot (about 350°F/175°C), carefully place the breaded chicken into the pan.
– Fry for 3-4 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
– Transfer to a plate lined with paper towels to drain excess oil.
5. Serve:
– Arrange the schnitzels on a serving plate.
– Garnish with fresh parsley and serve with lemon wedges on the side.
