Ingredients

-Bananas – 3, medium and overripe Banana should be mashed
– 2 large eggs
-1. 1/2 of one stick of unsalted butter, melted , or 1/3 cup vegetable oil
– 3/4 cup granulated sugar, you may cut back to 1/2 cup if preferred the cupcakes less sweet.
– 1 teaspoon vanilla extract
-1 ½ cups sifted all-purpose flour (whole wheat flour can also be used in place of APF for a better nutritional value)
– 1 teaspoon baking soda
– 1/4 teaspoon salt
– Optional: Chopped nuts such as walnuts, chocolate chips, raisins or other forms of compiling interest, 1/2 cup.

 

Instructions

1.Preheat the Oven:
You should now turn on your oven to heat to 350F or 175C. Preheat the oven at 350°F and greased a 9×5 inches loaf pan or use parchment paper to line the loaf pan.

2. Prepare the Wet Ingredients:
In one large bowl, bananas should be mashed until the mixture is completely smooth. For this the following steps are observed: 1 Melt butter 2 Stir in sugar 3 Beat in eggs 4 Mix in vanilla extract. Mix well until combined.

3. Combine Dry Ingredients:
In another bowl mix together the flour, baking soda and salt. Slowly combine the dry mixture into the liquids avoiding over mixing them. Avoid overmixing.

4. Add Extras (Optional):
If adding nuts, chocolate chips or raisins, mix them into the batter avoiding them to form large lumps.

5. Pour and Bake:
Bake this batter into the greased loaf pan. Mix it using a spatula by evenly spreading across the top. Bake in the preheated oven for 50-60 minutes or until the toothpick inserted in the middle spotlessly clean.

6. Cool and Serve:
Make sure that the bread has cool for nearly ten minutes in its pan before moving to the wire rack. Prepare fresh slices and can be served warm or at temperature.
